The Parisian Vanguard menu is an homage to the architectural precision and culinary evolution of the City of Light. It celebrates the tension between tradition and modernity—where centuries-old mother sauces meet contemporary plating. ​Inspired by the concept of "Technique as Art," it honors the ritual of the French kitchen while embracing a bold, forward-thinking aesthetic. It is a journey of deep, soulful flavors designed for a palate that craves both heritage and innovation.

This experience is a tribute to my evolution as a chef. It begins with the childhood memories of cooking alongside my grandmother at age eight, discovering the deep, soul-stirring flavors of traditional Mexico. It then travels through the technical refinement of my studies at Kendall College and the world-class kitchens of Chicago and Europe, where I earned a Michelin Star. ​Now, established in the Pacific Northwest, I bring these worlds together.
